The coffee is grown and processed without the use of any pesticides and chemicals. Coffee is harvested from November to March in three pickings. In Chiapas coffee harvesting is a family affair and you will often see three generations of the same family picking berries together. All of the children go to school but the economic conditions of the region mean that they have to help their families once they have finished their studies.
