To ensure that we only supply the highest quality coffee, the beans must be sorted and the inferior ones rejected. Sadly, but perhaps inevitably, mechanisation has arrived in Yajalon and coffee sorting is no longer done by hand. The arrival of the machine has put many of the skilful people who used to sort the coffee out of work. Longer term we would like to once again employ people in this vital role. For now we use a machine in Yajalon owned by Hans Zetser. Coffee is graded by size, weight and color.
